2 lbs. of the best self control
1 1/2 lbs. justice
l lb. consideration
5 lbs. patience
l lb. discipline

Sweeten with charity. Let it simmer well and let it be taken daily in large doses, and kept constantly on hand.



Blueberry Crisp
350 degrees serves 8-10 Nonnie

1/4 cup soft butter
1/2 cup flour }mix

1/4 cup sugar
1/4 cup brown sugar } stir till crumbley
1/2 cup uncooked oats
1/4 tea spoon cinnamon

1 tablespoon cornstarch
1/2 cup sugar } mix till smooth
1/2 cup water

6 cups blueberries
1 teaspoon grated lemon peel
1 tablespoon lemon juice


Turkey Tetrazzini 350 degrees 30 minutes June

1 cup chicken broth
1 can mushroom soup
1/2 teaspoon garlic/salt/pepper

2 tablespoon flour
1/2 cup cream } make a paste
stir untill smooth and thick, remove from heat

4 cups angel hair spaghetti-broken
1/2 cup parsely
2 cups chicken, cut into chunks
brown 4 strips bacon-chopp-mix w/ 1/2 cup of breadcrumbs
1/2 teaspoon dried italian seasoning

spray the baking dish, topped with crumbs and bacon.

Chicken Tetrazini

Chicken Tetrazini

4 chicken breasts
3 cans cream of mushroom soup
1/3 lb. grated sharp cheddar
1 lb. spaghetti - cooked
1 small can of mushrooms
1 tsp. salt

Mix soup, cheddar cheese, salt - stir together over low heat.
Drain spaghetti - add sauce, chicken, muchrooms
sprinkle with parmesan, dot with butter.

2-3 qt. casserole, 350 degrees for 30 minutes


MACARONI SALAD

1 lb. elbow macaroni
1 jar of Marzettis cole slaw dressing
1 small jar capers (drained)
8 hard boiled eggs-cut into pieces
3-4 stalks celery-cut into small pieces

Mix all ingredients together, then add mayo - enough until it looks good.
Serve cold. (if it is to thick when you take it out of the fridge, add more mayo)

Chicken Enchilada Dip

1 pkg. cream cheese
3/4 cup real mayo
1 small can chopped green chilis
3/4 pkg. taco seasoning
2 small cans or one lg can chicken
Diced jalapenos - according to your taste

Mix all ingredients and microwave
Serve with tortilla chips

2 cups whipping cream
5 ounces Boursin cheese with herbs
3 pounds unpeeled, uncooked, thinly sliced New Potatoes
1 1/2 tablespoons parsley

Preheat oven to 400* Butter 9 x 13 inch baking dish In a saucepan, stir whipping cream and cheese on medium heat until smooth Layer the baking dish with half of the potatoes and half of the sauce, and then the other half of the potatoes and the sauce. Sprinkle with parsley Bake at 400* for 1 hour, uncovered.

Muffuletta Crostini

Muffuletta Crostini

1 jar (3 ounces) pimiento-stuffed olives, drained and coarsely chopped
1 can (2.25 ounces) sliced ripe olives, drained
1 can (2.25 ounces) sliced kalamata olives, drained
1/4 cup finely chopped red onion
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 to 3 teaspoons prepared horseradish
1 to 2 teaspoons dried basil
1 large clove garlic, minced
1 package (8 ounces) cream cheese
Bakery toasted French bread slices (crostini)

In medium bowl, combine olives, onion, olive oil, lemon juice, horseradish, basil and garlic. Cover and chill. Place cream cheese on a serving plate. Spoon olive mixture on top. Serve with crosstini Makes 6-8 servings

Recipes from Family Friends

Susan H. Cheese Pie (super bowl party favorite)

6 eggs
1 lb swiss cheese
1 lb cheddar cheese
1 pkg sliced Monterey jack
10 slices bacon, crumbled
2 small cans green chilies
jalapeƱo peppers (optional)

Line pie pan with chilies
Cook bacon and crumble on top of chilies
Shred swiss and cheddar cheese, mix together
Mix eggs (salt & pepper to taste) with cheese, pour into pie pan
Top with Monterey jack cheese
Cook at 325° for 50-60 minutes until firm.

Karman’s Crab Rangoon

½ pound crab meat, drained and chopped
1 package (8 oz) cream cheese
½ tsp steak sauce
¼ tsp garlic powder
3 dozen won-ton wrappers
1 egg yolk, beaten
oil for deep frying

Combine crab, cream cheese and seasonings. Place 1 tsp of the mixture in each won ton.
Gather 4 corners of won ton together at the top. Moisten edges with egg yolk. Pinch or twist gently to seal.

Heat oil to 375 degrees. Add won tons in batches and fry until golden brown (about 3 minutes). Remove with slotted spoon and drain on paper towels. Serve hot.

Zucchini Bread (makes 2 loaves)

3 cups chopped zucchini
3 cups flour
2 ½ cups sugar
1 ¼ cups vegetable oil
4 eggs beaten
1 tbsp plus 1 tsp vanilla
2 tsps ground cinnamon
1 ½ tsp salt
1 ½ tsp baking soda
1 5sp ground cloves
½ tsp baking powder
2/3 cup raisins
½ cup chopped nuts

Heat oven to 325°. Grease bottoms of 2 loaf pans.
Beat ingredients on low speed, scraping constantly, 1 minute.
Beat on medium for 1 minute.
Pour into pans. Bake one hour until toothpick comes out clean.
Cool 10 minutes. Remove from pans.
Cool completely and serve.

Mom's Stawberry Jello

Mom’s Strawberry Jello Salad

1 pkg wild strawberry jello
1 pkg frozen strawberries
1 pkg dream whip
1 can peaches or fruit cocktail
handful of miniature marshmallows

Dissolve jello as pkg directs, add marshmallows, canned fruit and frozen fruit.
Let partially set.
Mix dream whip up as pkg directs. Fold into jello.
Let set completely

Cheesecake

Aunt Vir's Cheesecake

1 can crescent rolls
3 8oz pkgs of cream cheese
5 eggs
1 cup sour cream
1 1/3 cups sugar
1 tsp vanilla

Pat crescent rolls on bottom of 9”x12” pan…put seams together to cover bottom.
Blend cream cheese and eggs together
Gradually add sugar, sour cream and vanilla
Pour over rolls
Bake at 350° for 30-40 minutes
Turn off oven and leave in oven until golden brown
Sprinkle with cinnamon.

Gooey Butter Cake

Gooey Butter Cake

1 pkg yellow cake mix
3 eggs
1 box powder sugar
1 tsp vanilla
1 stick butter
1 8 oz softened cream cheese

Mix together cake mix, butter and one egg. Put into 9”x 12” pan. Mix cream cheese, sugar, vanilla and 2 eggs. (Leave a little sugar out for the top). Pour over cake. Bake at 350° for 30-35 minutes. Cool and serve.

English muffin pizza

English Muffin Pizzas
3 English muffins, cut in half
1 cup (8 oz) pizza sauce
1 cup mozzarella cheese
variety of toppings ( pepperoni, sausage, vegetable, etc)

Preheat oven to 350°
Spread each half English muffin with pizza sauce
Add toppings and cheese
Place on foil in 350° oven till hot and cheese melts

Sunflower Waldorf Salad
2 small apples, cored an chopped (about 1 ½ cups
1/3 cup sunflower nuts
¼ cup seedless green grapes, halved
1 stalk of celery, sliced
1 large banana, sliced
¼ cup plain yogurt
lettuce leaves

In a mixing bowl, toss together apples, sunflower nuts, grapes and celery.
Fold in the sliced, large banana and yogurt. Serve on individual lettuce lined salad plates.
Garnish with additional banana slices, if desired. Makes 3 or 4 servings.

Chocolate Icebox Pie


Yield Makes 8 servings
Ingredients
2/3 cup milk
3/4 cup semisweet chocolate morsels
1/4 cup cold water
2 tablespoons cornstarch
1 (14-ounce) can sweetened condensed milk
3 large eggs, beaten
1 teaspoon vanilla extract
3 tablespoons butter or margarine
1 (6-ounce) ready-made chocolate crumb piecrust
1 cup whipping cream (I used Coolwhip)
1/4 cup sugar
1/2 cup chopped pecans, toasted
1 (1.55-ounce) milk chocolate candy bar, chopped
Preparation
Heat milk until it just begins to bubble around the edges in a 3-quart saucepan over medium heat (do not boil). Remove from heat, and whisk in chocolate morsels until melted. Cool slightly.
Stir together cold water and cornstarch until dissolved.
Whisk cornstarch mixture, sweetened condensed milk, eggs, and vanilla into chocolate mixture. Bring to a boil over medium heat, whisking constantly. Boil 1 minute or until mixture thickens and is smooth. (Do not overcook.)
Remove from heat, and whisk in butter. Spoon mixture into piecrust. Cover and chill at least 8 hours.
Beat whipping cream at high speed with an electric mixer until foamy; gradually add sugar, beating until soft peaks form. Spread whipped cream evenly over pie filling, and sprinkle with pecans and candy bar pieces.

Brownies

BROWNIES
WARNING!Once you taste these you will never buy a box of Brownie mix again.
1 cup sugar
1/2 cup (1 stick) real butter cut into 4 or more pieces
2 eggs
1/2 teas vanilla
1/8 teas salt
1/2 cup cocoa
1 cup pecans, if desired
1/2 cup flour

In a food processor, with metal blade in place, add butter & sugar. Pulse (on-off-on-off) until thoroughly mixed, about 20 seconds. Add eggs, salt & vanilla. Process until smooth, about 10-15 seconds. Add cocoa & nuts. Pulse until cocoa disappears. Add flour and pulse until it disappears. DO NOT over mix. Spread into buttered 9" square pan. Bake in preheated 350 oven 35 min. Cool, cut into squares. Makes 9-16 Awesome Brownies.

Note: Probably could be made with a mixer, Ive never tried it. Cream butter & sugar on med speed until fluffy.. Add eggs etc mix until smooth, add cocoa, mix again. Add flour and mix with spoon, only until it's incorporated, add nuts, mix gently. Over mixing will make them tough & cakey. Bake as directed.

PORK with WILD RICE
6 oz pkge Uncle Ben's Long Grain & Wild Rice
1 can mushroom soup
1-1/4 cups water
4 oz can of mushrooms drained
6 pork chops salt & pepper

Mix rice, soup, mushrooms & water in a casserole. Put chops on top. Sprinkle chops with salt & pepper. Cover, bake for 1 hr 20 min in 350 oven. Super easy, really good!

Butter Toffee

Best EVER candy and makes a great gift. From the Artist in the Kitchen-St Louis Art Museum Cookbook.

BUTTER TOFFEE
1/2 cup real butter
1 cup sugar
1/2 teas salt
1/4 cup water
1/2 cup sliced almonds
3 oz choc chips

Rub inside edge of a large glass cassarole with butter and put remaining butter in cassarole. Pour sugar directly on butter in bottom of bowl, try to avoid getting sugar on the sides. Add salt and water. Microwave about 7 min probably longer until toffee colored. Pour syrup over almonds on buttered cookie sheet. DO NOT scrape bowl as candy will chrystalize. Microwave chocolate 1-1/2 -3 min just until melted. Spread onto toffee. Cool, break into pieces and enjoy!

Pink Cookies

1 strawberry cake mix
1 white cake mix
2 eggs
1/2 cup oil
1/3 cup water
1 bag of white chocolate chips (you may not want to use the entire bag)

mix altogether. Bake at 350 for 8-10 min. You may want to cook them a little longer depending on how you like your cookies. They will harden once they are removed from the oven.

AUNT JUNE'S MOSTACOLLI

I love this story, my memory, probably not quite correct, is she got it from the Art?? teacher at Old Bonhomme School. Who left under scandlous circumstances...he ran off with the French teacher??? Hysterical, especially if you know Aunt June.

2 lbs hamburger
2) 8 oz cans tomato sauce
2) cans tomato soup
2) cans stewed tomatoes
1 pkge Rices chili w/o beans (it's pkgd like bulk pork sausage in the meat aisle)
2 teas Seasoned salt
2 teas Oregano
1 onion chopped
16 oz Mostacolli noodles boiled & drainedBrown hamburger and onion. Drain well. Crumble chili into pan and melt it. Add rest of ingredients, simmer over low heat, stirring frequently, for 1 hour. Pour over noodles

Nonnie, your great grandmother acquired this recipe, my memory tells me, from her "Birthday Club". A group of Ladies, all related, who had lunch together once a month. They were related by marriage, all the wives, sisters etc. She thought it was delicious and perfect for Christmas dinner because it had RED tomatoes and GREEN peppers. Christmas colors

1 large pkg macaroni (16 oz)
1 cup chopped onions
1/3 cup Crisco-butter or oleo (margarine)
2 green peppers cut in long strips ( julienned)
1 #2 size can tomatoes (lge can, drained)
1 lb cheddar cheese-shredded
1 teas salt (recipe says 1 tble, way too salty)
1/2 teas pepper
3 eggs beaten

Cook macaroni. Melt Crisco-add onions-green peppers. Cook until soft-cook tomatoes. ( Save some cheese to put on top) Combine all ingredients except eggs and mix well. Stir in beaten beaten eggs. Pour in buttered casserole and bake about 1 hour in 350 oven.

Mexican 8 layer Dip

This is a great and easy dip. Bobby Schultz calls it UCity party dip because I always serve it & so does his best friend's Mom, who also lives in UCity, whenever we have a party. .

MEXICAN 8 LAYER DIP A.K.A. UCITY PARTY DIP

10-1/2 oz Jalapeno Bean Dip
6-3/4 oz Guacamole Dip
1 cup sour cream
4 oz shredded Monterrey Jack cheese
4 oz shredded Cheddar cheese
1 cup chopped scallions
2 chopped tomatoes
1 small can chopped black olives

Layer on tray or plate in order. Amounts are flexible.Serve with Doritos


CAESAR BURGERS

Burgers cooked anyway you like but season with garlic salt and sprinkle a little Worcester sauce on both sides the last few min of cooking.
Put into Pita Pockets, add shredded lettuce and Caesar Sauce.

CAESAR SAUCE

1/2 cup mayo
1/4 cup Parmesan Cheese
1/2 teas pepper
1 clove garlic chopped or use garlic press
Anchovy paste to taste
( I use about 1" of Reese's anchovy paste. It's in a tube. Kind of like toothpaste. It's in the aisle with the cans of tuna & salmon.I also probably double the Parm to 1/2 cup) Awesome, one of my kids favorites.


AUNT JUNE'S SLAW

1 head of cabbage thinly shredded
1 onion thinly shredded
Layer in a large bowl
Pour 1 cup sugar minus 2 tbl over top
Boil 3/4 cup oil, 1 cup vinegar, 2 teas celery seed, 2 tbl sugar (saved from the 1 cup above), 1 teas salt, 1 teas dry mustard. Pour over cabbage, cover with plastic wrap and refrigerate overnight. Stays good in fridge for at least 2 weeks.

Shrimp Dip

Shrimp Dip

1 can baby shrimp drained)
1 and a half cup shredded cheddar cheese
2 scallions (diced)
1 half cup mayo
3 shakes garlic powder

Mix all together
add more mayo till mushy.
serve with crackers.
